Food Square , Patiala , was the first of many unbranded restaurants designed by the practice in northern India , with clients who had little prior experience of the industry . This little eatery in the largely agrarian Punjab town of Patiala was a project where the practice designed all the elements - from graphics to kitchen equipment , and also got roped into assisting in locating consultants who sourced the staff , and designed the menu . An enriching experience in a project which almost ended up becoming the first of some Build, Operate , and Transfer ( BOT ) projects which the practice did in the late nineties. Opened in 1998.
